312 Aquaponics

A few weeks ago, we covered The Plant. Today, we heard about an incredible new business called 312 Aquaponics, housed inside the Plant’s building, a retrofitted meat-processing center.

Our favorite thing about these guys is that they represent exactly the kind of philosophy and business sense this symposium aims to propagate. They’re young (most graduated in 2010, with a fellow DePaulian, Mario Spatafora graduating in 2009), they’re enthusiastic, and they’re changing the way Chicago gets its food. We couldn’t be happier that this is going down right in our home city of Chicago.
